2 cans white beans, drained
1 1/2 cloves garlic, minced
6 TBS olive oil
Juice from a lemon
3 TBS cumin
1/2 tsp salt (to taste)
blue corn chips or almond slices
Combine all of the ingredients in a bowl and mash with a potato masher or the back of a fork until smooth and creamy. You will mash for a long time, but it will be worth it!
Serve with carrot fingers adorned with broken blue corn tortilla chip or sliced almond monster fingernails.
